Baking a cake for someone is just about one of the most fulfilling things you can do in my opinion. Home-baked cakes just taste so much better, I guess because they are made with love instead of additives! I first made this cake for the original Mrs H, who I affectionately refer to as my smother-in-law. She is so loving and kind (and is probably the biggest chocoholic I know after Mr H) so it seemed only right to debut this recipe on her birthday!
Sometimes when I speak to people about how I’ve changed my diet they become very concerned, and ask me how I can possibly survive without chocolate or comfort food. These little squares of heaven took a while to perfect, minutes to scoff, and bloody ages to name. You’ll understand when you try them (which, by the way, you must) – they’re like a cross between a truffle and an energy ball, with all the best bits of both. They’re so rich and delicious that you only need a little square to satisfy your chocolate cravings, but they’re packed with all sorts of good things too – cacao nibs and cacao powder are packed with antioxidants, maca is a great energy booster (and also great for fertility) and almond butter is a fantastic source of good fats and protein. When I was younger, my mum used to make us the most incredible birthday cakes. They were so chocolately and moist, but without a doubt the best bit was the frosting. Chocolate buttercream. I’d go so far as saying it was my favourite food when I was younger. My brother and I used to eat the sponge part first and leave the buttercream until last, which thinking about it now makes me feel a little unwell, but at the time it was bloody marvellous. Having given up dairy, these days this little indulgence is very much off the cards (with buttercream the clue is truly in the name), but even a gluten free, dairy free and refined sugar free cake needs some frosting, so I’ve been on the hunt for a suitable alternative. When I created my chocolate chip cookie dough bites (which if you’ve not made yet then you need to, sharpish) it reminded me how much we used to love Haagen Dazs cookie dough ice cream back in the day (before I ditched the dairy and sacked off the sugar).
I actually had a little bit of a lightbulb moment – I already had the cookie dough, so all I needed to make was the ice cream! Now vegan and sugar free ice cream doesn’t sound in itself too enticing, but you’d be surprised, once you try this you won’t be able to tell it apart from the regular stuff! In fact I actually think it tastes better (biased though we might be) as it’s super creamy and perfectly sweetened, but made with only natural ingredients. Continue reading
I’ve always had a little thing for chocolate cheesecake. Maybe it’s down to my Jewish roots (the Jewish festival of Shavuot is celebrated by eating cheesecake – #winning) or maybe it’s just because it’s insanely delicious.
When I was little my favourite thing in the world was a triple chocolate cheesecake from Marks and Spencer – I used to savour every mouthful and finish every morsel. On holidays to America we’d always end up making a subconscious beeline for the Cheesecake Factory and stuffing ourselves silly with their unbelievably tasty (and unbelievably unhealthy) offerings. There’s something ever so naughty about cookie dough. Perhaps it’s because you know that you should just put it ALL in the oven, but resisting the urge to eat half the raw mixture is about as easy as a week long juice cleanse. Or maybe it’s because you’re one of those people who likes to pick the cookie dough chunks out of their Haagen Dazs (pardon our French) while no one is looking.
Either way, there’s some very negative connotations around the stuff, but I’m happy to tell you that you CAN have your cake (well, cookie dough) and eat it.
