I hate wasting food. It makes me so sad when I have to throw stuff away at the end of the week that I make every effort to plan our meals in advance and order all our food online (because going to the supermarket alone with baby H is not the easiest task and going with Mr H in tow always seems to end up with us buying far more than we originally intended).
However each week there are still always items that don’t get used up, or meals that don’t get cooked (sadly more due to a lack of time these days rather than us spontaneously going out) so I do end up with the odd item that needs eating in some way, shape or form. Continue reading →
Jam really takes me back to my childhood; jam and cheese sandwiches (don’t knock it till you’ve tried it), a spoonful of jam stirred into hot rice pudding, my mums incredible sponge cake filled with jam that my brother and I simply referred to as ‘jammy cake’, my grandma’s amazing homemade jam tarts, the list just goes on and on. When I was younger, my mum used to make us the most incredible birthday cakes. They were so chocolately and moist, but without a doubt the best bit was the frosting. Chocolate buttercream. I’d go so far as saying it was my favourite food when I was younger. My brother and I used to eat the sponge part first and leave the buttercream until last, which thinking about it now makes me feel a little unwell, but at the time it was bloody marvellous. Having given up dairy, these days this little indulgence is very much off the cards (with buttercream the clue is truly in the name), but even a gluten free, dairy free and refined sugar free cake needs some frosting, so I’ve been on the hunt for a suitable alternative.
