When I was younger, restaurants always seemed to give you the bill on a saucer full of After Eight mints, which I guess must have been a 90s thing as it doesn’t seem to really happen anymore (or at least to me). Obviously being an adult now, the time when the bill comes is also far less fun given that the days of piggy banks and pocket money are long behind me, but to add insult to injury there’s definitely a distinct lack of After Eight action going on in the restaurants I frequent too. Peanut butter and raspberry jam cheesecake slice
I’ve said it before and I’ll say it again – peanut butter is one of the loves of my adult life. I’ll happily eat it on its own, but I’m fully aware that there are some foods out there that complement it beautifully too. Chocolate is one (try our peanut butter chocolate cheesecake slice if you don’t believe me) and jam (or jelly to our American pals) is another. In fact we must applaud our friends across the pond for this delicious combination as they came up with PB&J over 100 years ago! It seems to have taken its time to become quite as popular in old Blighty, but the PB&J revolution is definitely now growing momentum over here too.
Slow cooker sweet potato chocolate fudge cake with chocolate frosting
Baking a cake for someone is just about one of the most fulfilling things you can do in my opinion. Home-baked cakes just taste so much better, I guess because they are made with love instead of additives! I first made this cake for the original Mrs H, who I affectionately refer to as my smother-in-law. She is so loving and kind (and is probably the biggest chocoholic I know after Mr H) so it seemed only right to debut this recipe on her birthday!
No-bake banoffee pie
Whoever first thought to combine bananas and toffee to come up with banoffee pie is a genius, and I hope they received at least a Knighthood for their services to dessert (and maybe even a Nobel prize as well). I never actually used to like banoffee pie because of my sheer hatred (and fear) of bananas, but as a recovered banana-phobe, I’m definitely making up for lost time. Continue reading
Chocolate Easter nests with marzipan eggs
I used to love making Easter nests when I was little – my mum would melt the chocolate and then I’d get to stir in the Rice Krispies and spoon the mixture mostly into cake cases, but also some into my mouth. Some things never change – I still love making them, and I still manage to eat a fair amount of the mixture in the process. But these days I call it taste testing, so that makes it ok. Right? Strawberries and cream fudge bites
Valentine’s day is fast approaching again and whilst I’m not a fan of going out to dinner to a restaurant full of couples where the food is overpriced and menus often ‘set’ (read: limited), it is nice to celebrate love once in a while.
It’s not often we get the chance to tell our loved ones just how grateful we are for them putting up with us, and I’m not just talking about other halves here – friends and family deserve some Valentine’s day gratitude too I think. So whilst I don’t really agree with the commercialisation of February 14th (you’ll find me and Mr H at home, probably on the sofa eating a takeaway) I like the fact that it gives us that little nudge that perhaps we all need from time to time to tell our nearest and dearest (and ourselves!) just how amazingly awesome they are. Peanut butter & jam pancakes
I can’t even begin to explain how much I love peanut butter – it’s honestly my favourite food ever. So when I found out about peanut flour (which has much less fat than peanut butter but tastes equally as yummy) I was dying to create something delicious with it.
Given that it’s almost pancake day (not that we need an excuse to have pancakes, they’re a bit of a weekend special in our house these days) what could be more perfect than peanut butter pancakes? I’m drooling just thinking about them. Continue reading
Nine ingredient iced carrot cake
Carrot cake is one of my all time favourite cakes, it always has been. I’m a massive chocoholic, but ever since I was little I could never resist a slice of moist, rich, spiced carrot cake with that delicious cream cheese frosting.
It’s such a random idea for a dessert though isn’t it? I mean I know these days there are sweet potato brownies or chocolate cakes that count beetroot or courgette among their ingredients, but vegetables hiding in baked goods seems to be a pretty new phenomenon, except for our beloved carrot cake. Not only bloody delicious, but so ahead of its time. And who thought up the idea of cream cheese frosting? Whoever it was, I salute them.
