Valentine’s day is fast approaching again and whilst I’m not a fan of going out to dinner to a restaurant full of couples where the food is overpriced and menus often ‘set’ (read: limited), it is nice to celebrate love once in a while.
It’s not often we get the chance to tell our loved ones just how grateful we are for them putting up with us, and I’m not just talking about other halves here – friends and family deserve some Valentine’s day gratitude too I think. So whilst I don’t really agree with the commercialisation of February 14th (you’ll find me and Mr H at home, probably on the sofa eating a takeaway) I like the fact that it gives us that little nudge that perhaps we all need from time to time to tell our nearest and dearest (and ourselves!) just how amazingly awesome they are.
I wanted to create a recipe for something simple, delicious, indulgent and of course pink and heart-shaped too so that I had something distinctly Valentines-like to share with my loved ones that wasn’t full of sugar and additives and hadn’t cost me £20 for a small box.
These strawberries and cream fudge bites are so creamy and delicious, you’d be forgiven for thinking they were extremely sinful, but they’re just made of four healthy and natural ingredients.
Ingredients
- 1/2 cup sliced strawberries
- 1/3 cup maple syrup
- 1/2 cup coconut oil
- 1/2 cup cashew nuts, soaked in water for at least four hours
Simply pop the ingredients in a blender and blend for a couple of minutes until the mixture is silky smooth. Spoon into moulds and store in the freezer for 3-4 hours to allow them to set. Remove them from the moulds and leave for 10 minutes to defrost. Store in the fridge if there’s any left!
