Porridge, quinoa and cacao have to be three of my favourite things. So when the lovely people at Quinola sent us some of their new quinoa flakes to try, there was no doubt in my mind what I was going to make with them. Not only do I love the taste of quinoa, but it’s high in protein and will keep you full for hours, so it’s a fabulous alternative to oats if you’re looking to spice up your brekkie a little. Plus, almond milk is packed with good fats and cacao is choc-full (pun intended) of antioxidants, so all in all whilst it may look indulgent it’s a wonderfully healthy start to the day!
The best thing about this porridge is that it’s just so easy and quick to make – you can soak the quinoa flakes the night before to soften them and then all you have to do is pop them in a saucepan with the other ingredients for a couple of minutes and you’re good to go!
Another great thing about porridge is it’s like a blank canvas, you can add all the toppings you like – my favourites are sliced bananas, cacao nibs, raspberry chia jam and frozen raspberries (I like eating them frozen, kinda crazy like that but they’re great to buy frozen and then defrost as they’re much cheaper and fresher and last for ages in the freezer).
Ingredients
- 1 cup quinoa flakes
- 2 cups almond milk
- 1 tbsp cacao powder
- 1 tbsp maple syrup
Pop the ingredients in a saucepan, stir it all together well and bring to the boil, then reduce to a medium heat and cook for a further four minutes for a textured porridge or eight minutes for a smoother one. Spoon into a bowl, add your favourite toppings and enjoy!
