We’re not going to lie to you lovely D&H’ers, we were always a little skeptical of dairy-free cheese. The idea of making creamy, dairy-like deliciousness from nuts conjured up all sorts of weird-tasting images, but in the name of research we decided to give it a go!
So we’ve come up with this fabulous almond cheese, which can be enjoyed either raw (as a creamy cheesy spread) or baked (for a crumbly feta-like consistency). It’s so delicious and super creamy as well as being packed with protein and good fats. Oh and of course it’s really easy to make, you know we like to keep things simple! So what are you waiting for…give it a whirl!
Ingredients
- 1 1/2 cup ground almonds
- 1/2 cup water
- Juice of one lemon
- 1/2 tsp Himalayan sea salt (add more to taste if you like)
- 3 tbsp olive oil
- 2 tbsp nutritional yeast
- 2 cloves garlic
Mix all the ingredients in a food processor until lovely and smooth. Spoon the mixture into a bowl lined with cheesecloth (or if you don’t have this you can use a coffee filter or a hankerchief!) to soak up any excess liquid and refrigerate overnight. And there you have it!
We love it raw with home-baked tortilla chips, or baked on gluten free bread or avocado – divine!
