Mr H and I are having building work done at the moment, and although we are so excited for the end result, the last few weeks have certainly been a challenge. We’ve fought (and lost) many battles against dust, we’ve had to wash our dishes in the bathroom sink (gross) and our lounge currently looks like a jumble sale threw up on it. The other day we had a powercut. Mr H tried to fix it by swearing at the fuse box, but this didn’t seem to work. Magically the builders fixed it within five minutes the next day (they have superpowers I swear) but I’m now taking matters into my own hands just in case it happens again.
Now we all know carrots help you see in the dark (science geeks say so, so it must be true) so I got into my makeshift kitchen (aka my hallway) and created these retinol-packed balls of yum. Now if that’s not damage control I don’t know what is. Also they taste A-MA-ZING, plus they are full of vitamin A and antioxidants which promote healthier skin, and beta-carotene which can help slow down ageing. So no need to dig out that torch – just make a batch of these babies instead!
Ingredients
- 1 cup dates
- 1.5 cups ground almonds
- 1 medium carrot, peeled
- 1 tbsp cinnamon
First blend the dates in a food processor until they form a paste. Then add in the other ingredients and continue blending until all mixed together. Spoon into a bowl and roll into small balls. Place in the fridge for an hour or so to allow them to harden a little. Store in an airtight container in the fridge.
