Nine ingredient iced carrot cake


Carrot cake is one of my all time favourite cakes, it always has been. I’m a massive chocoholic, but ever since I was little I could never resist a slice of moist, rich, spiced carrot cake with that delicious cream cheese frosting.

It’s such a random idea for a dessert though isn’t it? I mean I know these days there are sweet potato brownies or  chocolate cakes that count beetroot or courgette among their ingredients, but vegetables hiding in baked goods seems to be a pretty new phenomenon, except for our beloved carrot cake. Not only bloody delicious, but so ahead of its time. And who thought up the idea of cream cheese frosting? Whoever it was, I salute them. You had me at shalom – Israeli inspired roasted aubergine with tahini 


Whenever I go and visit my cousins in Israel, I end up on the aubergine diet. I just can’t help it – though I may flirt with hummus, falafel, israeli salad and shakshouka, if I see a menu and there’s an aubergine on it, it’s all I can think about ordering. I never seem to tire of it; the combination of fresh coriander, creamy tahini and aubergine charred on the outside and soft and fleshy on the inside is just beyond heavenly. Continue reading

Acai bowls are taking the world by storm – and for very good reason. Give me a breakfast that looks like a sorbet and tastes like a sorbet, but is actually amazingly good for you and well, I’m sold.
