Peanut butter rawreos


My obsession with America started in my early teens, through my love of Abercrombie tracksuit bottoms, anything that said ‘Return to Tiffany’ on it, crappy US sitcoms, and peanut butter Oreos (which I will hereby refer to going forward as PBO’s for no other reason than that I can’t be bothered to keep typing it out). 
Luckily as the years went on most of my Stateside loves made their way across the pond to us here in the UK, but unfortunately the PBO’s were the exception. Perhaps they didn’t travel well. Either way, I was pretty sad they never made it onto our supermarket shelves, but hey, life goes on.

These days, my obsessions for baggy track pants and jewellery that looks like it was made for dogs have been replaced by new (and I would hope, slightly classier) obsessions for J Crew, Anthropologie and jewellery that I can’t afford, but my undying love of anything filled with peanut butter (and crappy US sitcoms) still remain.

These peanut butter Raweos are, in my humble opinion, a squillion times better than their unhealthy counterparts. They only have SIX ingredients (that’s 17 less than the PBOs’ 23) and there’s nothing genetically modified about them (if you check the back of a PBO packet you’ll see that a number of their ingredients are GM – scary).

These little delights are packed with protein and good fats, and are great for a little energy boost.

Ingredients

For the ‘biscuit’

  • 1 cup cashews
  • 1 cup dates
  • 3 tbsp cacao powder

For the filling 

  • 4 tbsp peanut butter
  • 4 tbsp almond milk
  • 1 tsp maple syrup

Combine the cashews, dates and cacao powder in a food processor and whizz until the ingredients form a sticky mixture. Shape them into round discs and pop them in the freezer while you make the filling.

For the filling, simply whizz up the ingredients in a food processor, then create the Raweos by spreading the filling onto half of the discs and sandwiching the other halves on top. Store them in the fridge or freezer and enjoy!

Baba ghanoush 

 

Baba ghanoush is my go-to starter in any Middle Eastern/Mediterranean restaurant. I just can’t get enough of it – it’s like the perfect marriage between aubergine and tahini, two of my favourite foods like, ever.

So one day I discovered that, to my delight, my beloved baba ghanoush had begun popping up in the dip aisle of the supermarket. Blinded by love for it, I ate pot after pot of the stuff, never really thinking to check out the list of ingredients on the back (FYI this was the old me, these days if I pick up anything that comes in a packet I’ve scanned the ingredients list before you can say ‘monosodium glutamate’. But by the time I finally did check what was in it, it was too late – Mr H had fallen for it as well, and he refused to listen when I told him that some of the ingredients weren’t so great. Very berry smoothie 

 

Summertime in the UK means berry time, and there’s just nothing like the taste of fresh, seasonal, locally sourced fruit that has gone from farm to fork (or in this case blender) in just a matter of days. You can really taste the freshness and the flavour, which is why (along with the environmental reasons of course) we are so for buying seasonal produce.

Berries (and blueberries in particular) are high in antioxidants, as well as being low GI, so they’re great if you’re trying to cut down on sugar, and they won’t cause a spike in your blood sugar levels. Continue reading

Chocolate milk is just the ultimate indulgence isn’t it? For me, it also comes with a hint of happy nostalgia – it takes me right back to being little and finding it hilarious to blow bubbles in it with my straw. Butternut squash ‘quisotto’ 


Risotto is one of those things I’ve always liked the taste of, but I could never quite bear how it made me feel after eating it. Arborio rice (the rice that is used in a typical risotto) is particularly starchy, so can easily leave you feeling bloated and heavy after you’ve consumed a whole bowl of it in one go. Pair that with a rich, cheesy sauce as many risotto recipes do and you’ve got a combination that leaves many people feeling pretty darn rubbish. Continue reading

(Builders’ best) black bean brownies

This recipe is totally dedicated to my lovely builders – for the last couple of weeks not only have they worked construction-related miracles in the Hollingsworth household, but they have also doubled up as the most fabulous recipe testers.

In the last fortnight I’ve been working on making the perfect black bean brownie – I can’t tell you how many batches they’ve tried (and, by their own admission, enjoyed). The first time I produced a tray fresh out the oven I spoke nothing of their secret ingredient, and when I confessed (post consumption) what the brownies were made of they were most surprised! To be honest it’s for that reason that I prefer black bean brownies over sweet potato ones – you can’t really taste the beans at all and they just add to the texture and overall deliciousness.
