We’re sure you know us by now – we love a simple recipe. If it’s healthy, cheap and quick then it’s a winner in our books. We also love pesto. So these two loves led us to create a super easy, inexpensive (and vegan) pesto recipe that we just can’t get enough of.
There are a lot of fancy pesto recipes floating around at the moment, but our firm fave is still the original basil and pine nut combo (hold the cheese Louise). We actually don’t even notice that there’s no cheese in it, we’re sure if you serve it to your friends they won’t either!
Ingredients
- 1/2 cup fresh basil
- 1/2 cup pine nuts
- 2 tbsp olive oil
- A pinch of Himalayan sea salt
Simply add the ingredients to your food processor or blender and whizz for 30 seconds to a minute (depending on how chunky you like your pesto to be). Easy right? It’s delicious over courgetti or gluten free pasta, but you could add it to anything.
