‘Cheesy’ garlic sweet potato mash with toasted pecans

This is my new go-to side dish when it comes to entertaining. I’m obsessed with sweet potato as you may well already know, especially in the form of wedges, but when you’re having lots of people over (or if you’re just juggling a million things at once and trying to cook a meal at the same time aka my life) these are very low-maintenance. All you need to do with these is peel, chop, boil and whizz – it’s oh so simple, not to mention totally delicious.  Continue reading

Peanut butter cup chocolate fudge brownie birthday cake

Peanut butter cup chocolate fudge brownie birthday cake

This year was Mr H’s 31st birthday, which he really wasn’t happy about. Apparently he’s ‘properly’ in his 30s now that his age  doesn’t end in a zero anymore, or at least that was his logic. So as the day approached it became clear that to cheer him up I’d need to feed him something chocolatey, indulgent, rich and delicious, and to get top wife marks it would need to include some peanut butter too.

Greena colada smoothie

Greena colada smoothie

I’m not a big fan of walks in the rain, but I do like a good pina colada. In fact it was the very first cocktail I tried thanks to my Dad – he had a theory that if you give your kids a tiny bit of alcohol from a young age they’re less likely to be lightweights as you’ll have built up their tolerance for alcohol slowly over the years. I don’t think said theory has any scientific backing, although it certainly meant that booze never really became a ‘thing’ for me – I’ve never been a binge drinker, even at university, and these days nine times out of ten I’ll pick a smoothie over a sauvignon blanc. Choco-banana-quinoa breakfast sliders

Chocolate banana quinoa breakfast slider pancakes

Breakfast is a magical thing – it has the power to transform something that would usually be classified as a dessert into a totally acceptable main meal. And I’m all about taking advantage of gastronomical norms when it means I get to start my day with something super delicious, a little sweet and potentially (and more often than not) full of cacao and or nut butter.

Peanut butter and raspberry jam cheesecake slice

Peanut butter and raspberry jam cheesecake slice

I’ve said it before and I’ll say it again – peanut butter is one of the loves of my adult life. I’ll happily eat it on its own, but I’m fully aware that there are some foods out there that complement it beautifully too. Chocolate is one (try our peanut butter chocolate cheesecake slice if you don’t believe me) and jam (or jelly to our American pals) is another. In fact we must applaud our friends across the pond for this delicious combination as they came up with PB&J over 100 years ago! It seems to have taken its time to become quite as popular in old Blighty, but the PB&J revolution is definitely now growing momentum over here too.

Butterbean and sweetcorn spread

Butterbean and sweetcorn spread

Last week I was at home, waiting patiently for a delivery that was meant to come anytime between 7am and 7pm (such a helpful timeframe, not) and then it dawned on me – it was nearing lunchtime, I was pretty much under house arrest and I hadn’t thought to buy myself anything to have for lunch. First world problems I know, but bear with me.

I scoured the kitchen, but unfortunately my fridge resembled a scene from the Arctic (barren, white and cold) so I rooted through the cupboards to see what I could find there. Luckily I always have a bunch of tinned things on hand (because you never know when you’re going to get snowed in?) so I got thinking. I banned mayonnaise from our house a while ago and started making Mr H tuna and sweetcorn ‘mayo’ using tahini, lemon juice, cumin and tamari instead and he loves it, so I thought what if I sub the tuna (which I don’t tend to eat because of the mercury content amongst other reasons) for mashed beans instead? It didn’t look like Mr delivery man was going to turn up any time soon, so I had time to experiment. Continue reading

Liver loving beetroot, carrot, apple and celery juice

Liver loving Beetroot carrot apple and celery juice

This little recipe is dedicated to our lovely livers. We often forget about them and make them do things they really don’t like (i.e. process alcohol) but because we can’t see them we rarely stop and think about how they might be feeling. Our livers are often pretty overworked trying to filter and detoxify all the rubbish we send them on a daily basis, so they need a little helping hand every once in a while. It’s worth noting that if we do neglect them too much, we start seeing dark under eye circles, bad skin and we get hit with headaches and crazy tiredness, so it’s definitely best to give our livers a break every once in a while. Raspberry ripple mini cheesecakes

raspberry ripple mini cheesecake heart
I’m not a massive ice cream person these days, but when I was younger we’d always have raspberry ripple ice cream at my grandparents house for dessert, and I used to love it. So I guess this recipe is somewhat of a nostalgic one, but with a healthy twist. Raspberries are one of my favourite berries, I get so excited when they come into season (and so sad when they go out of season, but I guess that’s what my freezer’s for) and this year I was desperate to go raspberry picking. However with the arrival of baby H we had a pretty busy summer so we never quite managed to go, but it’s definitely on my list for next year! If you have any recommendations of where’s good to pick them near London please do let me know! Continue reading

Tiramisu – better latte than never!

Coffee is like marmite – you either love it or you hate it – and if you love it (like me) it can be dangerously addictive. I used to get through not one, not two, but three large skinny lattes a day when I was working in an office, but managed to wean myself off it and felt loads better for doing so. But I do still really love the taste of it, so these days I’m still partial to the odd decaf almond milk latte here and there.
