Breakfast is a magical thing – it has the power to transform something that would usually be classified as a dessert into a totally acceptable main meal. And I’m all about taking advantage of gastronomical norms when it means I get to start my day with something super delicious, a little sweet and potentially (and more often than not) full of cacao and or nut butter.
But you know me, I’ve got a serious side too. I like to always make sure I’m powering up for the day with something suitably energising, high in protein and good fats.
Cue my choco-banana breakfast sliders! With only six ingredients and a very easy method these are so simple to make. The banana and quinoa are great energy boosters, while the cacao and coconut oil provide antioxidants and good fats. They can be eaten hot or cold (I like to make a batch on the weekend to have during the week).
Ingredients
- 1/3 cup quinoa, uncooked (we used Quinola black quinoa)
- 2 medium bananas, mashed
- 2 tbsp maple syrup
- 1/2 cup buckwheat flour
- 1 tbsp cacao powder
- 1 tsp coconut oil
In a mixing bowl, combine all the ingredients except the coconut oil and stir until all mixed together.
Heat the coconut oil in a frying pan until it becomes liquid and then spoon the mixture into the pan (1 heaped tbsp equals 1 slider). Pat the sliders down so they are about 2cm thick and fry on each side for a couple of minutes. Serve with berries, a drizzle of maple syrup or even a side of coconut or cashew cream – delish!
