I have the perfect easy, speedy, tasty, festive, healthy, kid-friendly, impressive-looking recipe for you – my six ingredient snazzy little snowmen (or snowwomen if you like). If you answered yes to c) I know you’re a bit pushed for time so I won’t go on about them any longer! I’ll just leave you to it – you can thank me later!
Ingredients
- 1 cup cashews
- 1 cup oats
- 1.5 cups dates
To decorate
- Small bowl of coconut flakes
- Handful of goji berries
- Handful of cacao nibs (or chocolate drops)
These are so easy to make! Just put the cashews, oats and dates in a food processor and whizz until a crumbly, sticky mixture forms (this should take a couple of minutes or so). Shape the mixture into balls; some larger for the bodies and some smaller ones for the heads.
Roll all the balls in the coconut flakes to give them a lovely snowy coating, then carefully stick on the goji noses and the cacao nib (or chocolate drop) eyes and buttons. Then pop the heads onto the bodies and voila! Easy peasy right?
