Israeli salad


My favourite thing about visiting Israel has to be the food (unless my cousins are reading this in which case my favourite thing is seeing family, closely followed by the food). They might call it the land of milk and honey, but for me it’s the land of houmous, falafel, baba ghanoush, dates, figs, oranges – the list just goes on and on.

One of my favourite things to order in restaurants when I’m there is Israeli salad, which for those not in the know is simply cucumber and tomato (and sometimes onion but not for me – I can’t bear the aftertaste) chopped up super small with a few other flavours thrown in, and not a lettuce leaf in sight. It’s usually served as a side dish, and goes really well with dips or falafel (or some grilled chicken for all you carnivores out there).

The salad is so refreshing and light, and you also get a mini arm workout from all the chopping! In Israel they make it look so easy, but I guess they must all just be super strong after their time in the army!

Ingredients

  • 2 tomatoes
  • half a large cucumber
  • Juice of half a lemon
  • A large handful of parsley, chopped
  • 1 tbsp olive oil
  • Pinch of Himalayan sea salt

Chop the tomatoes and cucumber into small cubes and mix together in a bowl. Add in the other ingredients and stir – there you have it!
