Magnums for me send me right back to summer holidays on the beach. Every day after lunch my dad would declare it was ‘about time for an ice cream’ so off we’d trot to the nearest ice cream van or shop and make our selections. It was a very tough decision making process, especially as there were always so many that took our fancy.

Is there anyone who didn’t make rice crispy treats when they were little? Surely not. They are the epitome of baking for beginners, the perfect little foray into the world of sweet treats and one of my favourite things to teach when I’m running a baking class for people who were born on the right side of the year 2000.

Rocky road is one of my favourite things ever – the crunchy biscuit, the chewy raisins and all the chocolate – we’re basically talking perfection here. We’re also talking a very indulgent and often sugar-laden dessert but what if I told you that these balls are just as good, if not better!

Every year Mr H and I say we are going to go strawberry picking, because let’s face it, nothing beats British strawberries and the concept of being able to secretly stuff our faces with them while no one is watching sort of appealed to us too.
This year we finally made it, and I think it was just at the right time too. Baby H is old enough to understand how to pick them, and it made me very happy teaching her that they actually grow on bushes rather than in boxes in the supermarket. She was in absolute heaven, as was evident from the giggles of excitement and the pink stains all over her top. Continue reading
I know I’m totally on the same (rather crowded) bandwagon as everyone else but I’m really loving turmeric right now. I got a little bit obsessed with turmeric lattes (no caffeine + actually good for you = winning) but I was spending a small fortune on them every week so decided to give making them at home a go. Coconut and chocolate are pretty much a match made in heaven, wouldn’t you agree? There’s something amazing about rich indulgent chocolate combined with sweet creamy coconut that just hits the spot. Coconut is also the best dairy substitute around in my opinion, there’s coconut cream, coconut milk, coconut butter – everything dairy can do coconut can do too!

Nothing beats a good royal wedding, especially when the weather is going to be nice too (which it does always seem to be for royal weddings) so that we can all celebrate outside with a glass of Pimms in one hand and cake in the other. Continue reading

I don’t know about you but at the first hint of summer I’m all over the frozen desserts. And when British strawberries are about to come into season I stock up on them too and stuff my freezer full to last me as long as possible (although they normally don’t end up lasting very long). I am absolutely adamant that this year we will finally do what we say we’re going to do every single year and go to a pick your own strawberries place. Fingers crossed we can find a weekend day amongst all the summer weddings and birthday BBQs to get our strawberry pick on.
With my love of stashing strawbs and my love of frozen treats when the sun is out it seemed only natural to combine the two. So here we have it; strawberry ice lollies with just three ingredients, so easy to make and the most refreshing and delicious dessert to enjoy outside in the sunshine!
Makes 8 mini lollies
Place the ingredients in a blender and whizz until they form a smooth purée. Pour into moulds and place in the freezer overnight to set.

Ok guys. Put your hands up if you’re feeling;
If you don’t have your hand up, you’re free to leave. If you do, keep scrolling (you can put your hand down now too).
It’s so easy to forget to look after our bodies properly, leading to us feeling all sorts of rubbish and making our immune systems more susceptible to all sorts of nasties.
So we gotta look after ourselves. Which means we have to eat properly. You wouldn’t expect your car to run off water or coffee would you? It needs petrol (or diesel, don’t get them mixed up trust me it’s very expensive) and our bodies are much the same. They need the right fuel; a good balance of carbs, protein, healthy fats, vitamins and minerals.
These lemon and ginger balls are a fab snack if you’re trying to eat healthily and look after yourself. They’ve got lots of fibre, healthy fats and protein, as well as the amazing anti inflammatory benefits of ginger plus it helps settling tummies (great for morning sickness) and it’s also great for your skin.
So if you’re feeling a bit under the weather (and even if you’re not) swap your lemon and ginger tea for one of these balls – you won’t regret it!
Ingredients
Simply blend the ingredients in a food processor for a couple of minutes until they form a sticky mixture. Roll into balls and roll in extra coconut if you want, then store in the fridge or freezer.
Love, Mrs H xx
