Rocky road balls

Rocky road is one of my favourite things ever – the crunchy biscuit, the chewy raisins and all the chocolate – we’re basically talking perfection here. We’re also talking a very indulgent and often sugar-laden dessert but what if I told you that these balls are just as good, if not better!

Until a while ago, buckwheat was, to me, just a flour one could bake with. I’ve since discovered buckwheat groats and I’m not going to lie, they’ve rocked my world. Bake them in the oven for ten minutes and they go all toasted and crunchy. The perfect biscuit substitute for this recipe!

These balls only require 8 ingredients and are very simple to make. They’re the best little pick me up if you need a little chocolate hit and since I’ve come up with them I’ve been making them on repeat.

They seem to disappear from my fridge at an alarming rate; when I confronted Mr H he muttered something about baby H learning to climb on a chair and open the fridge herself (this is true – she’s definitely our daughter alright) but I think we’d be kidding ourselves if we didn’t admit that we are the real culprits. They just taste so indulgent, when you open the fridge door to get something they’re just there staring at you and it’s so hard to resist!

Ingredients

  • 1/2 cup buckwheat groats
  • 1 cup medjool dates
  • 1/2 cup cashew butter
  • 5 tbsp cacao powder
  • 1 tbsp coconut oil
  • Pinch of Himalayan salt
  • 1/3 cup raisins
  • 1/3 cup goji berries

Preheat your oven to 180C, then pour the buckwheat onto a baking tray and toast for 10 minutes. Place them and all the other ingredients except the raisins and goji berries in a food processor and whizz for about a minute until all combined.

Add in the raisins and gojis and pulse for a further 30 seconds or so, then shape into balls and store in a the fridge or freezer.
