
I kept hearing about this stuff called ‘yogurt bark’ and it didn’t sound super appetising if I may say so. Then I realised what it was, nothing to do with trees at all and way more than JUST yogurt. This one not only tastes amazing, it’s super good for you, a lovely healthy snack (especially on a hot day) and it’s incredibly easy to make. Oh and have you seen the colour!
This was my first foray into yogurt barks and there’s no stopping me now. I’ve got yogurt bark ideas coming out of my ears but this one is one I come back to again and again. It’s particularly good also if you’ve got blueberries to use up. I don’t know about you but when they start to go a little mushy I can’t bring myself to eat them so have to blend them up into something and this is the perfect thing to use them in!
Makes one baking sheet of bark
Ingredients
- 2 cups coconut yogurt
- 1 cup frozen blueberries
- 2 tbsp pure maple syrup
- desiccated coconut to sprinkle on top, optional
Place the coconut yogurt, blueberries and maple syrup in a blender, then whizz until smooth. Pour onto a lined baking sheet, decorate with any coconut and place flat in the freezer for around two hours to set, or more if needed.
Break into pieces and enjoy from frozen straight from the freezer. Store in the freezer for upto two months.
