My favourite breakfast ever is berries and yogurt (with some granola on top) as I just love the creamy smooth yogurt and the tart sweet berries together; it’s just so delicious I could eat it for every meal! Now that it’s summertime (as I write this) I’m experimenting with some delicious new lolly flavours to satisfy my sweet tooth while keeping me hydrated and cool at the same time too. I love how refreshing these are and how fancy they look with the yogurt and berries swirled together. They’re like a parfait in an ice lolly and I’m so here for it.
These are so easy to make as you only need a handful of ingredients and if you’ve got any berries that are a bit squishy and past their best then these are a great way to use them up. They really are such a delicious summery treat!
Ingredients
Makes four small lollies
- 1 cup strawberries
- 1 cup blueberries
- 1 cup yogurt
- 3 tbsp pure maple syrup
Blend the berries separately, each with a tbsp of the maple syrup, then pour each mixture in a separate bowl.
Stir the yogurt with the final tbsp of maple in a third bowl, then spoon alternating spoonfuls into lolly moulds. Give them a swirl with a chopstick or similar to swirl them in together a little, then place in the freezer for four hours or until completely frozen and enjoy! Keep in the freezer for upto one month.
Love, Mrs H xx
