Banana bread. Turns out it’s a thing, and what better way to enjoy it than with a little added spice, some gojis and a lot of peanut butter on top. Don’t worry if you don’t have the goji berries, you can sub for raisins or even just omit if it’s too off piste for your liking.
This one received rave reviews in House of Hollingsworth, even the small ones loved it! It freezes really well too, so great for snacking on during the week if you bake it over the weekend!
- 4 flax eggs (4 tbsp ground flaxseed with 12 tbsp cold water, set aside for 5 minutes to form a gel)
- 5 tablespoons coconut sugar
- 2 tbsp coconut oil
- 80g (2/3 cup) ground almonds
- 70g (2/3 cup) oats
- 2 tablespoons goji berries
- 3 ripe large bananas (or 4 medium), mashed
- 1 tbsp cinnamon
- 1 tsp ground ginger
- 1 tsp ground turmeric
Preheat the oven to 180°C and line a loaf tin with baking paper. Add the oats, ground almonds, coconut sugar and spices to a bowl and stir until combined.
In another bowl, beat together the bananas, coconut oil and flax eggs, and slowly pour this in to the bowl with the dry ingredients, stirring well. Finally stir in the goji berries and spoon the mixture into your tin.
Bake for 1 hour (or until a skewer inserted comes out clean). Leave to cool and then dig in!
