I love cheesecakes. I love smoothies. So by mathematical logic, it should make sense that I double love cheesecake smoothies. And that logic ain’t wrong my friends. Want to know the great thing about cheesecake smoothies?
Let’s call them smoothcakes for short, because I’m catchy like that. Smoothcakes mean you get all the creamy delicious fruity taste of a cheesecake, but you don’t have to wait for it to set. No more painful hours pacing the kitchen checking your watch wondering whether it’s time to devour the goods.
So without further ado, I present to you these very berry smooth cakes. Perfect for a little treat, morning, noon or night!
Serves two
Ingredients
For the berry layer:
- 1 cup frozen strawberries
- 1 cup frozen cherries
- 2 tbsp maple syrup
- 1/4 cup coconut cream
For the creamy layer:
- 1 tub vegan cream cheese
- 1/2 cup coconut cream
- 2 tbsp maple syrup
To make the berry smoothie base layer, just blitz the ingredients in a blender until smooth, then pour into glasses leaving 1/3 at the top for the next layer.
To make the creamy layer, just combine the ingredients in a bowl, stir well and dollop into your glasses.
Enjoy straight away for ultimate deliciousness!
