Brookies

This is another one for my fellow indecisive people out there. When you just love brownies and you just love cookies and you just can’t choose between them. Brookies are the answer. That’s brownies on the bottom, cookies on the top – two times the deliciousness in each heavenly slice.

I was so excited when I thought of these to try them out and my gosh they certainly did not disappoint. I had some very happy taste testers who gave me some VERY good reviews so I’m pretty sure you’re going to go absolutely mad for them too. When I posted them on Instagram everyone went a little mad for them, and I promise you they taste every bit as good as they look. Oh and they’re only 9 ingredients for both layers, so that’s a bit of a win too. They won’t cost you tonnes of money to make either, but you’ll feel like you’ve gone and won the lottery once you try them! I absolutely can’t wait to hear what you guys think!

For the brownie

  • 1 cup cacao powder
  • 1 cup medjool dates
  • 1/2 cup almond milk
  • 1/2 cup pure maple syrup
  • 1/2 cup cashew butter
  • 1/2 cup ground almonds
  • 1/2 cup coconut oil

For the cookies

  • 1 cup ground almonds
  • 1 cup oats
  • 1/2 cup cashew butter
  • 1/3 cup coconut oil, melted
  • 1/2 cup pure maple syrup
  • Pinch of Himalayan salt
  • 1/2 cup chocolate chips
  • Preheat your oven to 150C. For the brownies, simply combine the ingredients in a food processor and whizz for around a minute or so until you have a smooth, gooey batter. Spoon this into an 8″ square foil tray, silicone mould or lined baking tin.
  • To make the cookie layer, blitz the oats in a food processor for about a minute until they become a flour, then add them to a mixing bowl and stir in the ground almonds and salt. Cream in the cashew butter maple and coconut oil, mixing well until you have a sticky cookie dough. Lastly throw in the chocolate chips and mix them in well, then spoon the batter on top of the brownie layer.
  • Bake for 60 minutes, then leave to cool completely before cutting into squares. Store in the fridge or freezer in an airtight container.
