Coconut acai balls

Yes you read right. I see acai BOWLS everywhere I go these days, they’re the trendiest breakfast around and despite our climate not being quite ideal for frozen smoothie bowl consumption people are just going mad for them.

But why? What is acai? And how do we even pronounce it? A-say-ee is a superfood from South America, it’s actually a berry that comes from a type of palm tree and it’s totally packed choc a block with antioxidants. I got sent a pot recently of acai powder by the lovely people at Of The Earth Superfoods, so I decided to buck the trend (not that I’ve ever been ‘on trend’, she says in her mum jeans and cacao covered T shirt) and give my balls, and not my bowls, a little sprinkle of acai amazingness.

These balls are a) amazingly good for you – antioxidants – check, good fats – check, fibre – check, protein – check, b) totally delish and c) only five ingredients. They taste totally tropical, all coconutty and sweet with a little berry tartness, and I just can’t stop making them! So roll over acai bowls, acai balls are in the building (and they won’t give you brain freeze in this crazy British weather)!

Ingredients

  • 1 cup medjool dates
  • 1 cup cashews
  • 1/2 cup desiccated coconut
  • 1 tbsp coconut oil
  • 2 tbsp acai powder
  • Optional: more desiccated coconut and pink pitaya powder for rolling

Pretty easy peasy here – just pop the ingredients in a food processor and whizz for about a minute or two until all lovely and sticky. Roll into balls and roll in more coconut if that floats your boat, then dig in! Store in the fridge or freezer in an airtight container.
