Six ingredient no bake peanut butter fudge flapjacks 

 

My six ingredient no bake chocolate fudge flapjacks have been one of our most popular recipes to date, both on Instagram and among my family and friends; Mr H says they are the ‘best thing ever’ (which coming from a man with such gastronomical experience is quite an accolade), my family (and his) now request them at family gatherings and friends who’ve tried them are similarly obsessed.

They’re just so easy to make, and, as they require neither an oven or a food processor to make, are pretty faff-free (and with minimal tidying up). They also only require 6 ingredients which keeps it simple and lowers the cost of making them, as some healthy treats can cost a fortune when you add everything up! But the BEST thing about them is definitely the taste as there’s just no way in hell that if you did a blind taste test you’d think they were anywhere near healthy. They just taste like pure heaven.

So as I’m clearly onto a good thing, I’ve decided to mix it up a little and create a few varieties of these beauties. I’m a hugeeee peanut butter addict, so it seemed only natural to give a PB-based version a go. And boy are these good too. Could they even perhaps be better!? I’ll let you be the judge of that…

Ingredients

For the flapjacks

  • 2 cups oats
  • 1/3 cup raisins
  • 4 tbsp maple syrup
  • 1/3 cup coconut oil, melted
  • 1/2 cup peanut butter

For the chocolate fudge

  • 1/2 cup maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup coconut oil, melted

For the chocolate topping

  • 1 1/2 tbsp cacao powder
  • 1/4 cup coconut oil, melted
  • 1 1/2 tbsp maple syrup

To make the flapjack base, just combine the ingredients in a mixing bowl and stir well. Spoon into a lined baking tin or mould and press down evenly to make sure the mixture is all compact, otherwise it won’t stick together nicely. Pop it in the fridge while you make the peanut butter fudge.

For the fudge, again just add the ingredients to a mixing bowl and stir until you have a thick chocolatey mixture (don’t worry if it seems quite liquid as this will set in the fridge). Pour it on top of the flapjacks and put them back in the fridge for an hour or so to allow them to set. Alternatively if you’re impatient like me you can always put them in the freezer and they will set quicker.

To make the chocolate topping, simply combine the ingredients in a small bowl until they form a smooth liquid, then drizzle over the flapjacks. Cut them into squares and enjoy!
