
Rocky road. What an apt recipe to be sharing in 2021! It’s been a Rocky road alright, but baking has certainly helped many of us through. I’ve baked lots of things to keep us going, I’ve baked as an activity with baby H during homeschooling months, I’ve baked and left goodies on friends and families doorsteps to spread a little love, and I’ve baked and queued for the post office to send my goodies to lovely customers all over the UK.
This recipe came about because my kids were watching Blippi on YouTube (yet again) and he went to a factory where they made some Rocky road. My daughter said ‘I want to make that’ so I came up with this super simple version, with my own little twist of course!
You only need 7 ingredients for this, and you can swap things like nut butter for nut free alternatives if you like too, it’s very flexible and takes just a few minutes to make! I’ve even done it one handed…
- 1/2 cup coconut oil
- 7 tbsp cacao powder
- 5 tbsp maple syrup
- 5 tbsp tahini or nut butter
- 1 cup biscuit chunks (I use the biscuit part from this recipe but you can use ready made ones if you like)
- 1/2 cup cashews or macadamias, or seeds to make it nut free
- 1/3 cup raisins, goji berries or cranberries
Melt the coconut oil in a saucepan on a low heat, then stir in the cacao powder, maple syrup and tahini or nut butter until you have a chocolatey mixture.
Pop the other ingredients in and stir well, before pouring it into a mould or lined baking tray (mine is 8” square) and then place in the fridge for two hours to set. Cut into squares and store in an airtight container in the fridge or freezer.
