Chocolate covered cookie dough balls

So I’m a big fan of all the raw balls, but covered in chocolate they’re even better! These have got me through this year, and they get devoured so quickly in our house!

The mixture of dates, oats and cashews makes for the gooiest cookie dough batter, and the chocolate coating is just the icing on the cake!

I’m so excited about this super easy recipe as it’s totally foolproof and I challenge anyone not to scoff the lot!


For the balls

– 1 cup dates

– 1/2 cup oats

– 1/2 cup cashews

– 1/2 tsp vanilla extract

For the chocolate on top

– melt your favourite raw chocolate or just melt 1/4 cup coconut oil and mix in 2 tbsp cacao powder, 1 tbsp nut butter and 2 tbsp maple syrup!

Pop the ingredients for the balls in your food processor and blend until they form a sticky mixture. If the dates aren’t soft enough to blend easily, add some water one tablespoon at a time as a little goes a long way. Roll the mixture into balls and place in the freezer for minimum two hours.

For the chocolate on top either melt your chocolate or your coconut oil in a bowl over a saucepan half full with water on the hob, and then if using coconut oil mix in the other ingredients. Remove the balls from the freezer and dip them in the chocolate one by one until they’re all covered in chocolate. Repeat the process until all the chocolate is used up.
