Raw coconut brownie truffles

So this is all a bit weird isn’t it? But if we’re hanging out at home, the kids aren’t in school and the other half needs working from home snacks, then these are the real deal.

Fun to make with little ones, great to freeze for whenever you need them and insanely yummy. Only 6 ingredients and all things you can pop in your store cupboard too, so these really are the perfect little pick me up!

I make these every week for us, and usually treat myself to one after dinner. Although I could probably eat a whole batch, they’re that good! You’re going to love them too, I’m so sure!

  • 2 cups dates
  • 1 cup desiccated coconut
  • 1/2 cup cashew butter
  • 2 tbsp coconut oil
  • 2 tbsp cacao nibs
  • 6 tbsp cacao powder

Simply pop the ingredients in a food processor and whizz for about a minute until they form a sticky mixture, then roll into about 12 balls.

For extra deliciousness, melt some chocolate (or make your own by melting 4 tbsp coconut oil and stirring in 2 tbsp cacao powder, 1 tbsp maple syrup and 1 tsp cashew butter) then dunk in the balls! To make the chocolate set better I find freezing the balls for an hour beforehand works wonders!
