I’m finding more and more that I keep running out of time – I always seem to be rushing around and I honestly don’t know where the days go. People used to tell me that time gets quicker as you get older and I definitely believe it now. I also think that because I’m doing something I love I’m not just sitting at a desk twiddling my thumbs and clock watching, but whatever it is I have to really make a conscious effort to spend a little time each day being mindful, for my own sanity if not everyone else’s!
One thing I’ve noticed about all this running around that I seem to do is that a) I need to take snacks everywhere I go and b) said snacks need to be energy boosting and easy to make. I used to always have an emergency Nakd bar in my handbag, but it really is so much cheaper to make snacks yourself at home and it doesn’t have to be difficult either.
These cookies are hands down my new favourite on the go snack, for so many reasons. Here’s a list;
- They only require four ingredients
- They’re so cheap to make
- Oats are amazing for keeping your blood sugar levels happy
- Bananas are also a great energy booster
- They take all of 15 minutes to make (including baking time)
- They taste amazing
- They have chocolate chips in
These are such a hit in our household – I love them when I’m on the go or if I haven’t had time for breakfast and need something as I’m running out the house and Mr H takes them to work for an afternoon snack or as a little sweet treat post dinner. Let me know what you think of them too!
Ingredients
- 2 ripe bananas
- 2 cups oats
- 5 tbsp maple syrup
- 1 small bar of raw chocolate (about 30g), or a handful of dark chocolate chips or cacao nibs
Simply mash the bananas in a bowl, then add in the oats and maple syrup and stir together well. Break the chocolate into chunks and stir this through the mixture, then form into balls and flatten into round cookies.
Place on a lined baking tray and bake for 10 minutes at 180C. Leave to cool for 10 minutes and enjoy!
