I’m a massive fan of chia seeds; I sprinkle them in my porridge, on my soups and salads, I love a good chia seed pudding and they’re amazing as an egg replacer in vegan baking. So when the lovely people at Of The Earth Superfoods sent me some of their chia seeds as part of their Organic September campaign I was super excited to get in the kitchen.
Chia seeds are touted as a superfood, and for good reason as they have about a zillion and one health benefits – they’re packed with antiodixants, fibre, omega 3s and protein, as well as being great for your skin, heart, digestive health and lots more. Pretty damn super if you ask me!
I came up with this recipe as I’m currently breastfeeding my first baby and finding that I need to have lots of energy-boosting snacks on hand so that there’s always something healthy to keep me going – it’s tiring work! These beauties are totally Paleo and Whole30 compliant too, plus they’re really quite delicious!
They’re only 5 ingredients and are super easy to whizz up in just a few short minutes, great for mamas like me who have very little time on their hands! I like to make a batch of these on a Sunday and then pop them in the fridge to nibble on during the week. They’re smooth, truffley, rich and chocolatey, and the chia seeds add a lovely crunch to every bite.

Ingredients
- 1 cup medjool dates, pitted
- 1 cup almond butter
- 2 tbsp coconut oil
- 4 tbsp cacao powder
- 2 tbsp chia seeds, plus 4 tbsp more for rolling (optional)
This is such an easy recipe to make – just pop the ingredients in a food processor and whizz for a couple of minutes until they form a chocolatey sticky mixture. Shape into balls, then pour the additional chia seeds onto a plate and roll the balls around in them to coat them. Store in the fridge or freezer.
