Smashed avocado on toast


I have a massive sweet tooth, but there are times (usually after a lot of dessert recipe testing) that my body craves something savoury first thing in the morning. Even if I’m in a massive rush I still make time for breakfast (it’s a cliche but it really is the most important meal of the day) and my favourite go-to savoury brekkie has to be smashed avocado on toast. I don’t even know if this can technically be called a ‘recipe’ because it’s just so simple and quick to make, but it tastes so amazing that I just had to share it with you.

The flavours work so well together; creamy avocado, tangy lemon juice and spicy chilli flakes, all set off by a little Himalayan salt and olive oil. It’s just perfection, and I don’t think I could ever tire of it. It’s great as a light lunch or dinner too, and I often find myself making it on a Sunday night after one of my mother-in-law’s epic Sunday lunches!

Ingredients

  • Two slices of your bread of choice (I love organic rye bread), toasted
  • A ripe avocado
  • Juice of half a lemon
  • A pinch of Himalayan sea salt
  • 1/2 tsp olive oil
  • Optional: a pinch of chilli flakes

This is just so easy you could do it with your eyes closed! While your bread is toasting, half the avocado, remove the stone and skin and pop the insides in a bowl. Mash with a fork until it’s all smushed up, then add the lemon juice, olive oil and salt and give it a good stir. Spread over your toast and top with a sprinkle of chilli flakes if you fancy giving it a little kick. How’s that for fast food!
