Chocolate peanut butter protein cookies

I’ve said it before and I’ll say it again. And again. And again. Like a broken record. Chocolate and peanut butter, together, is literally my idea of heaven. The flavour combo of dreams if you will. I was inspired to make these when the lovely people at Bulk Powders sent me some of their vegan protein powder and one of the flavours was, you guess it, peanut butter & chocolate.

These cookies were my first foray into the world of protein powders in baking and I’ve got to say they turned out pretty well. They’re great for pre or post workout snacking and then travel pretty well so you can pop them in a Tupperware if you’re heading to the gym and fancy a quick post workout treat!

Personally, I don’t feel the need to workout to be eating these, but as I’m a breastfeeding mum of two I feel like my whole life is essentially one big workout, so a little extra protein is always welcome!

You only need five ingredients to make these, and they’re mega easy too as always, so more time to fit in that workout if you’re that way inclined. Or more time to chill out and watch Netflix. Either way, more time is always a winner!


  • 1 scoop vegan protein powder (I used a chocolate flavour one)
  • 2/3 cup peanut butter
  • 6 tbsp cacao powder
  • 4 tbsp maple syrup
  • 2 flax eggs (2 tbsp flaxseed + 6 tbsp of water left to bind for 10 minutes)
  • Pinch of himalayan salt

Chocolate drizzle

  • 4 tbsp coconut oil, melted
  • 3 tbsp cacao powder
  • 3 tbsp maple syrup
  • Pinch of himalayan salt

Preheat your oven to 180C. To make the cookies, combine the protein powder and cacao powder in a mixing bowl and stir, then add in the other ingredients and knead into a big ball. Split this into around 10 small balls and shape each one into a flat round patty (around 1cm thick) with your hands. Place these on a lined baking tray and bake for ten minutes.

Allow them to cool, then make the drizzle by mixing the ingredients in a bowl until you have a smooth chocolate. Drizzle this over the cookies using a spoon and finish with roasted peanuts for an extra protein punch!
