Nothing beats the feeling of waking up on the weekend, checking your phone to see what the time is, and realising that you don’t have to get up for at least another hour. Pure bliss. Add to that the fact that when you do finally get up it’s totally acceptable not to get dressed before midday, and the fact that it’s also 100% ok to eat dessert for breakfast, and you’ve got yourself one hell of a morning.
Don’t get me wrong though, when I say dessert for breakfast I don’t mean something laden with sugar, dairy and white carbs. Although from the picture above you might think that that’s exactly what I mean. But guess what? Said above picture involves only four ingredients, and they’re all super healthy and amazingly good for you. I guess some things aren’t too good to be true!
These are by far my favourite weekend breakfast indulgence, as they taste so naughty, but they don’t leave you feeling bloated or on a crazy sugar high like you would with your average short stack. Plus, they’re really ridiculously easy to make, which is just what you want first thing in the morning!
- 3 ripe bananas
- 1 cup buckwheat flour
- 1 cup almond milk
- 1 tbsp coconut oil, for frying
Pop the bananas, buckwheat flour and almond milk in a blender and whizz for about a minute until a lovely smooth batter forms.
Heat the coconut oil in a frying pan and once melted, pour in 1/4 of the batter (or more if you want bigger pancakes!). Fry for a couple of minutes each side, tossing if you dare, until they are golden brown. Top with fruit, drizzle with melted chocolate or maple syrup and grab a fork!
