Every time I hear the word ‘parfait’ it makes me think of that scene from Shrek where Shrek is trying to tell Donkey that ogres have layers like onions, and Donkey is trying to tell him that there are a lot better things with layers that he could compare himself to;
You know what ELSE everybody likes? Parfaits! Have you ever met a person, you say, “Let’s get some parfait,” they say, “Hell no, I don’t like no parfait”? Parfaits are delicious!
And you know what? He’s not wrong! There’s a reason why the name of this dessert (or breakfast in this case) means ‘perfect’ in French – you just can’t fault it! This one is so easy to make, looks super impressive and tastes bloody awesome.
- 1 cup granola
- 1 Roberts Berrie blueberry smoothie (or 1 cup blueberries)
- 1 cup strawberries
- 1/2 cup coconut cream (leave a tin of coconut milk in the fridge overnight, it will separate and the solid part is the cream)
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
To make the berry layer, simply pop the blueberry smoothie (or blueberries) in a blender with the strawberries and blend until all mixed together.
For the cream layer, mix together the coconut cream, vanilla extract and maple syrup in a small bowl.
Now for the fun bit! Spoon the granola, berry layer and cream layer one by one into shot glasses or small glasses. Then grab that spoon and dig in!
