May – it’s probably our favourite month of the year. Not only are there TWO bank holidays, the Eurovision song contest and potentially a day or two of warm-ish weather, but it also marks the beginning of British strawberry season. I’m so excited to get my strawberry on that I could practically sing about it, but I won’t, as I’d most likely end up with nil points.
Anyway, here at Mrs H’s I’ve got my thinking cap and my chefs hat on (I look pretty silly), and I can’t wait to share this a-May-zing new recipe with you. These super simple strawberry cheesecake balls are just perfect for snacking – I’ll be taking them with me everywhere I go this summer! They really are so delicious – I’ve named them strawberry cheesecake as not only are they full of juicy strawberry flavour, but the cashews give them a wonderfully creamy taste and the dates provide just the right amount of natural sweetness. So don’t worry, not a smidgen of cream cheese nor a biscuit crumb in sight – phew!
- 1 cup cashews
- 2 cups ground almonds
- 1/2 cup strawberries
- 1 cup dates
Blend the strawberries, dates and cashews in a food processor until they form a paste. Pour into a mixing bowl and stir in the ground almonds. Once all the ingredients are mixed together, shape into balls and refrigerate for an hour.
